When we first opened it was important to us to have as little impact on the environment as possible. So, we recycle plastic, glass, tin, aluminium, cardboard, paper, inkjet cartridges and used cooking oil gets processed to make biofuel. In the winter we use the log burning stove to heat the café instead of electric heaters and fuel the fire with sawmill waste briquettes and wood from the local tree surgeon (Cairngorm Tree Care) who provide the waste wood from tree pruning.
We also try to source as much of our ingredients as possible locally – Aviemore butcher, Glen Feshie salmon, local milkman, Strathspey Mushrooms, Nees Oils and Highland Wholefoods. Our uniforms are fair-trade trade cotton, as is the coffee, tea and sugar. And where possible we use recycled plastic such as the bin-bags.
